• 1 cup mashed sweet potatoes (about 1 medium sweet potato)
• 1 cup whole wheat flour (or almond, or gluten-free flour)
• 1/2 cup rolled oats
• 1/4 cup brown sugar or coconut sugar
• 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp cinnamon
• 1/4 tsp salt
• 1/2 cup milk (dairy or plant-based)
• 2 large eggs
• 1/4 cup coconut oil or melted butter
• 1/2 cup chocolate chips (dark or semi-sweet)
• 1 scoop of Whey Protein
Instructions

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with oil.

Peel and boil a sweet potato until soft. Mash it in a bowl. Let it cool a bit.

Mix the flour, oats, brown sugar, baking powder, baking soda, cinnamon, and salt in a bowl. Stir the mix.

Beat the eggs in another bowl. Add the milk, oil (or butter), and mashed sweet potato. Mix until well joined.

Slowly blend the dry mix into the wet mix. Now add the

Spoon the batter into the tin. Fill each cup about 2/3 full. Bake for 18-20 minutes. A toothpick in the center should come out clean.
